  1. Pat the fish dry with a paper towel.
  2. In a shallow dish, mix together the flour, salt, and pepper.
  3. Dredge each piece of fish in the flour mixture and shake off any excess.
  4. In a large heavy skillet, melt 1 tablespoon butter and 1 tablespoon olive oil over medium high heat.
  5. Cook the fish in the skillet for 3-4 minutes on each side, until golden brown and fully cooked.
  6. Remove fish from the skillet to a plate.
  7. If skillet is completely dry, add a little bit more oil or butter. Add the garlic to the skillet and sauté until fragrant, about 30 seconds.
  8. Add the white wine to the skillet to deglaze, stirring up any browned bits.
  9. When wine has reduced by about half, add the water and bring to a simmer.
  10. Turn off heat and stir in remaining 1 tablespoon butter, lemon juice, and fresh herbs. Taste and adjust seasoning if necessary.
  11. Serve sauce on top of fish.

Notes

For a paleo option, use almond flour or coconut flour instead of all purpose flour, and ghee instead of butter.
