Avocado and Chorizo Toast
AVOCADO TOAST IS AMAZING!!! This version has spicy and smoky chorizo on top, and is seasoned with fresh lime juice, garlic, and cilantro. Good for breakfast, lunch, or dinner, and only takes FIVE MINUTES to make!

- 4 slices whole wheat or multigrain bread
- 2 tablespoons olive oil
- 1 clove garlic sliced in half crosswise
- 1 avocado
- 4 lime wedges
- 2 tablespoons chopped fresh cilantro
- salt and pepper
- 8 oz cooked chorizo served warm
- Extra cilantro and lime wedges for serving optional
Toast the bread.
As soon as the bread comes out of the toaster while it's still warm, drizzle each with an equal portion of olive oil and rub the cut side of the garlic onto each oiled piece.
Using a fork, mash 1/4 of the avocado on top of each piece of toast.
Top avocado with a squeeze of lime juice, salt, pepper, and cilantro.
Top each toast with the cooked chorizo.
Serve with extra cilantro and lime wedges, if desired.
