This simple, three-ingredient watermelon salad with mint involves nothing more than layering fresh, ripe watermelon, crumbled feta cheese, and chopped mint on a platter. You'll have a delicious sweet and salty summer salad perfect for entertaining in only about 5 minutes!
Sprinkle the crumbled feta cheese evenly on top of the watermelon, followed by the fresh chopped mint.

Notes
You can buy pre-crumbled feta cheese, but I always find it's much more tasty (less dry, and more evenly sized) if you crumble it yourself from a block. I usually do this with the tines of a fork - it only takes a minute to do.
1/4 cup of fresh mint is a lot, but that amount works well in this salad. You can take it down to 2 tablespoons if you don't want to buy that much mint, especially since fresh herbs can be expensive (luckily, fresh mint is easy to grow yourself!).
Do serve this salad immediately. The salt in the feta cheese will draw the water out of the watermelon, resulting in sogginess after a while. Leftovers are still tasty, but serve it for your main event just after assembling.
Variations: you can add cucumbers, red or green onions, other herbs like cilantro or dill, a drizzle of olive oil and/or balsamic vinegar or glaze, if you want.
