Spinach and Cheddar Microwave Quiche in a Mug
This quiche takes only five minutes to make, and is a high protein, veggie-packed breakfast to kickstart your day! No more excuses for not eating breakfast.

Ingredients
- 1/2 cup chopped frozen spinach thawed and drained (or 1/2 cup packed fresh spinach)
- 1 egg
- 1/3 cup milk
- 1/3 cup shredded cheddar cheese
- 1 slice cooked bacon chopped (optional)
- salt and pepper to taste
Instructions
- If using fresh spinach, place it in mug with 2 tablespoons of water. Cover with a paper towel and microwave on high for one minute. Remove from microwave and drain the water and liquid from spinach thoroughly.
- If using frozen spinach, make sure it is completely thawed and drained and add it to the mug. (If there is too much liquid, the quiche will be runny. I like to put the thawed spinach in a mesh sieve and press firmly with a wooden spoon to do remove as much liquid as possible.)
- Crack the egg into the mug with the spinach and add the milk, cheese, bacon (if using), and salt and pepper. Mix until thoroughly combined.
- Cover with a paper towel and microwave on high for 3 minutes (see note on timing below), or until fully cooked.
Notes
- If you have a powerful microwave, you may need less time. If you are unsure, check it at 2 minutes, then again at 2 1/2 minutes. If the eggs seem watery, they need more time. But if they are solid, then you're good to go!
- Sometimes, even a paper towel isn't enough to prevent a microwave mess. If you find that your eggs have a tendency to pop and make a mess, you can dampen the paper towel to weigh it down a bit or even cover it with a small plate.

Thanks so much, this was great to make, and tasted good enough for too little bacon & salt. But I made mine with whole wheat & all-purpose flour mixed crust using the recipe linked here, with some changes: https://www.cooks.com/recipe/ph1rf66c/microwave-pie-crust.html
The crust recipe was 1/4 of the ingredients, a cereal bowl, Corelle brand was used, and baked for 2.5 minutes in an 1100 watt microwave. The crust was balled and shaped to the bowl, with rim reduced to larger pot pie height, rolling the crust would have been better. Then when it was done & cooler, the quiche mix was added, the damp paper towel over the edges, and baked for 3 more minutes.
The crust remained crispy, even though I used squish strained canned spinach instead of frozen or fresh. Adding additional or baking then adding cheese on the top, or chives, or sour cream wouldn’t be a problem.

I make these with different vegetables, just using whatever I happen to have on hand. I also like to add some different spices or herbs into the egg as I’m beating it so there’s good flavor at the end of the cooking time.
These little mug meals are great; even though I’m retired and live in an apartment where we aren’t allowed to have even a tiny potted garden outside, nor are animals allowed (so I have lots of free time), I like to cook meals that don’t have me spending hours in the kitchen.

I haven’t made this yet but want to try it. I have one question though – the picture shows something red in it and I wasn’t sure if that was the bacon or tomatoes (not mentioned) or red peppers (not mentioned)??

I make this a few times a week because my diabetic husband has to have a protein breakfast. One easy addition is pre cubed ham that I divide into snack bags then defrost as needed. I also add pre fried and frozen pepper and onions. Drained salsa added is also tasty.

I was skeptical of this. In my experience microwave meals rarely turn out as advertised. But I was curious, I was hungry, and I had bacon bits that needed to be used up. So I made it, with expectations about as low as the deepest point of the Grand Canyon. I was pleasantly surprised. It tasted great, the ratios were perfect, neither too much spinach, nor too much egg, and the texture was ok. It was a little runny though and the eggs had the texture of, well, microwaved egg. For a 5 minute microwave meal this was excellent, but if you have the time, use a pan. You’ll be glad you did.
