I have made this on countless occasions and every single time it turns out perfect. This recipe couldn’t be easier. Everything is mixed in one bowl and you don’t need any special equipment (like a food processor) to make it! It’s an awesome mixture of sweet and spicy and it’s one of the prettiest salsas you can make.
On the weekends, I always make time to do some preparations for easy weeknight meals, such as making pizza dough or marinara sauce in bulk. I made this today for quick and easy fish tacos later this week (look for a post on that coming soon!). I’m just hoping I can exercise enough restraint to actually save it for the tacos and not keep sneaking bites on tortilla chips on every visit to the fridge. Uh oh… getting the urge… must… resist…

The trickiest part is cutting the mango. Mangos are one of my all-time favorite fruits, but I used to avoid buying them because they seemed to be such a pain to peel and cut up! When I learned this technique my mango-cutting world was turned upside-down.
Very similar to cutting an avocado, you begin by cutting the long sides of the mango off. The pit is wide, and so is the mango. Cut just to the side of the center in a curved way parallel to the width of the pit, to cut around the pit and get a majority of the fruit off. Then, in each of the halves, slice a grid in the mango flesh without cutting through the peel. Flip it inside-out, and you can easily use a small knife to separate the cubes of mango from the skin!

Recipe below! Enjoy on fish tacos, on grilled fish or chicken, in a sandwich or on top of a salad, or with your favorite Mexican-inspired food, like on top of cilantro-lime brown rice.
|Easy Mango Salsa|| || |
- juice of one lime
- 2 teaspoons honey
- 1 teaspoon salt
- 2 mangos, finely chopped
- 1 jalapeno pepper, deseeded and finely chopped
- 1 tablespoon finely chopped red onion
- 2 tablespoons finely copped fresh cilantro
- Comine lime juice, honey, and salt in a medium sized bowl. Whisk together until honey dissolves and mixture is combined.
- Add remaining ingredients, stir until combined.
- For best results, allow to sit in refrigerator for at least two hours before eating.
