Then, a sprinkling of oregano and sea salt, with slices of feta cheese and fresh summer tomatoes. This Greek sandwich takes less than 5 minutes to throw together and is delicious, simple, and easy. Perfect for those peak-season tomatoes and a fun way to change up your lunchbox routine!
You’ve heard of Southern tomato sandwiches. You’ve had thick slices of ripe tomato on a BLT. And I’m sure you’ve had an Italian Caprese sandwich with tomatoes, mozzarella, and basil. But have you ever had the Greek version of a tomato sandwich with sliced feta cheese? It will swiftly become your new favorite kind of tomato sandwich!
What sets this sandwich apart this is the garlic-infused flavor. After the bread is toasted, while it’s still warm, you’ll drizzle olive oil on it and immediately rub the cut size of a clove of garlic on it. The flavor of the garlic infuses into the oil, enhanced by the heat still coming off of the toasted bread. I do this with avocado toast and Caprese sandwiches and it makes all the difference in the world!
Ingredients and Substitutions
- Sliced Bread – whatever your favorite is (I love Dave’s), something that you can stick in toaster to warm it up (if using pita bread or something like that, you’ll have to warm it in a skillet instead!).
- Feta cheese – make sure to buy chunk style, not crumbled. You’ll slice it for this recipe! (pro-tip: buying chunk style and crumbling it yourself is much better than pre-crumbled, in any case!).
- Tomato – preferably an in-season, ripe, juicy tomato. If it’s off-season, Campari tomatoes are pretty reliably flavorful.
- Extra-virgin olive oil
- Fresh garlic clove – you can use a sprinkling of garlic powder in a pinch, but a fresh garlic clove is preferable here.
- Dried oregano – or fresh can be used if you have it.
- Sea salt and black pepper
How to make a Feta and Tomato Sandwich
First, toast your bread. Not too toasty! Just enough to warm it up and get a little crunch going. Drizzle the bread with olive oil as soon as it comes out of the toaster while it’s still warm. Immediately rub the cut side of a clove of garlic on top of the oil (the warmth will infuse the garlic flavor throughout!). Sprinkle with dried oregano, then layer sliced feta and tomatoes on top of one slice of bread. Sprinkle on some sea salt and black pepper. Place the other piece of bread oil-side down on top of the assembled sandwich, and voilà! Your feta and tomato sandwich is complete!
What kind of bread to use
It’s easiest to use sliced sandwich bread for this feta and tomato sandwich so you can easily toast it to warm it up, then rub the clove of garlic on it.
I’m a huge fan of Dave’s Bread – specifically the thin-sliced version. This is a bread you can buy in the bread aisle of your grocery store. It’s full of whole grains (without tasting like cardboard!), and the ingredients list is quite wholesome.
Using pita bread (or another kind of flatbread)
As mentioned above, one of the best things about this sandwich is rubbing a cut clove of garlic on the warm toasted bread to infuse the garlic flavor throughout. This can be achieved with pita bread or flatbread (like naan or a wrap), but you’ll need to warm it up using a different method than a toaster. You can use a hot skillet to warm/toast one side of a piece of pita bread, a small-ish wrap, or naan, then proceed with the recipe to drizzle olive oil on the warmed side and rub garlic on it.

Greek Feta and Tomato Sandwich

Ingredients
- 2 slices bread any kind you like; see notes
- ½ tablespoon extra-virgin olive oil
- 1 clove garlic cut in half cross-wise
- pinch dried oregano
- 2-3 thick slices of a large tomato
- 2-3 slices of chunk-style feta cheese (about 2 oz.)
- pinch sea salt
- pinch black pepper
Instructions
- Toast the 2 slices bread in a toaster. As soon as they come out, drizzle the ½ tablespoon extra-virgin olive oil across both pieces. Immediately rub the cut side of one of the halves of the 1 clove garlic onto the oil-covered. bread. The heat from the bread will infuse the garlic flavor throughout (you can save the rest of the clove for another purpose, if you like!).
- Sprinkle the bread with a pinch dried oregano. Layer the 2-3 thick slices of a large tomato and the 2-3 slices of chunk-style feta cheese on top of one of the slices of bread. Sprinkle with a pinch sea salt and a pinch black pepper.
- Place the other piece of bread on top of the stack, oil-side down. Cut in half and enjoy!
Notes
- Sliced bread that can easily be warmed up in the toaster is the most convenient to use here. I’m a big fan of Dave’s thin-sliced bread, easily found in the bread aisle in your grocery store. If you want to use pita, a tortilla, naan, or another kind of flatbread, you’ll need to use something other than a toaster to warm it up. I recommend toasting one side of it in a dry skillet, then removing and drizzling with oil and rubbing with garlic on that warmed side.
